Remember those chickens we had for dinner on Sunday? Well, we stuck the carcasses...I don't love that word, anywho...we stuck them in the fridge and have been meaning to make some chicken stock with them. Today was the day. Chris put the two carcasses in a big pot along with some onions, celery, carrots and spices and simmered it for a couple of hours. The house smelled wonderful all afternoon! And now we have a bunch of delicious chicken stock in the freezer for another day. Love it!
