Whole Wheat Zucchini Bread

This is one of my most favorite breads ever!  They have Greek yogurt in them which makes them very moist and super delicious.  I always make two loaves as this yumminess doesn't last long around here!  I took this pic on a day when I made these Whole Wheat Banana Pancakes too...they're also very delish.

Whole Wheat Zucchini Bread
Adapted from this recipe
  • 1 1/2 cups whole wheat flour
  • 1/2 tsp salt
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1 egg
  • 1/3 cup extra virgin olive oil or coconut oil
  • 1/3 cup applesauce
  • 2 Tbsp plain Greek yogurt
  • 1/2 cup honey
  • 2 tsp vanilla
  • 1 1/2 cups shredded zucchini
Preheat oven to 325 degrees.  Mix flour, salt, baking soda, baking powder and cinnamon in a large bowl.  Then mix the egg, oil, applesauce, yogurt, honey and vanilla in a separate bowl.  Add the wet ingredients to the dry ingredients and stir well until combined.  Fold in the zucchini and then pour into a bread pan sprayed with olive oil spray (I used a 9x5) and bake for 50-60 minutes until golden brown on top.  Let it cool a bit and then enjoy!
